How to Make Gluten Free Protein Bar

You have to believe me that homemade protein bars are so tasty and once you learned how to make it you will not buy store-bought protein bars again. All the ingredients in this project are all natural – no artificial sweeteners, no synthetic food dyes, no artificial food flavorings, no hydrogenated oils and no preservatives whatsoever This project will start with detail explanation on how to melt the chocolate until how to make perfect protein bars, and followed by the recipes.

(I) How to melt the chocolate and coat it on your protein bar

1. Fill the bottom of the double boiler with 2-3″ water. Make sure that the water does not touch the bottom of the double boiler insert! Put the double boiler over medium heat.

2. When the water is heating up, cut the chocolate into pieces and place them in a double boiler insert. When the water starts to boil, reduce the heat to a medium low.
3. Stir gently until the chocolate is melted and completely smooth.
4. Place a silicone baking mat on the jelly roll and arrange the protein bars on top.
5. Ladle the chocolate over the protein bar with a large spoon. Try to encase the entire protein bar with chocolate.

6. Relocate it to refrigerate until firm (about 1 hour). Pack the protein bars separately in a plastic sandwich bag and store in refrigerator.

(II) How to make the perfect protein bar

1. Measure the size of your pan and cut your parchment paper into long strips so that it fits nicely inside your pan.

2.  Place the paper inside the pan, leaving the overhang for easy removal later on.  Use mini binder clips on the sides of the pan to fix the paper in place.

3. Make a protein bar recipe and pour the mixture into the pan.

4. Press the mixture with a silicone spatula and spread it to the edges of the pan. You could use a pastry roller to make it more even.

5. Fold one side of the parchment paper over flattened protein bar and round out the edges with your fingers. Run your finger along the edge until it’s smooth. Repeat this step onto all four sides.

6. Cover with plastic wrap and refrigerate overnight.
7. Remove the protein bar out of the pan. Using a sharp knife, slice the mixture down the center and repeat and until the size you want.

Recipe 1: Chocolate Fudge Protein Bars (original flavors)

DIY Chocolate Fudge Protein Bars

Ingredients (Yield: 10 Protein Bars)

Ingredients (A)

  • 130g Roasted Almond Butter
  • 268g  Unsweetened Vanilla Almond Milk
  • 1 tsp Vanilla Crème-Flavored Liquid Stevia Extract

Ingredients (B)

  • 80g Oat Flour
  • 168g  Chocolate Brown Rice Protein Powder
  • ⅛ teaspoon Salt
  • 10g Unsweetened Natural Cocoa Powder

2 tbsp Mini Semi-Sweet Chocolate Chips

Methods:

  1. Place parchment paper on an 8×8-inch brownie pan. Put it aside.
  2. Add ingredients (A) almond butter, almond milk and stevia extract in an electric mixing bowl fitted with a beater attachment. Set to stir at low speed, at the same time preparing the dry ingredients.
  3. Prepare a medium-sized bowl, mix and whisk the ingredients (B) protein , oatmeal, cocoa powder and salt together. Turn off the stand blender and pour in the dry ingredients. Return the blender at low speed and stir until the dry ingredients are fully mixed. If necessary, scrape down the sides of the bowl. You should get mixture with sticky form, like cookie dough.
  4. Pour the mixture into a prepared brownie pan and use silicone spatula to spread it and flatten it nicely. Sprinkle mini chocolate chips over the mixture and press them into the surface. Cover the pan tightly with plastic wrap and refrigerate overnight.
  5. Remove the mixture from the pan. Cut into 10 pieces. Pack the protein bars separately in a plastic sandwich baggies and refrigerate (keep for about 1 week).
