Immune-Boosting Vinegar Infusion

This infusion is commonly known as “fiery cider” or something similar. Recent year the infusion of immune-enhancing herbs and hot peppers into apple cider vinegar has become popular, for good reason. This is an effective panacea that will set fire in your belly and make you feel healthy all day. Although hot peppers do benefit the immune system, many people cannot tolerate them and would rather exclude them. This recipe is good for the immune system with or without peppers, depending on your preference. If you decide to use hot peppers, you can choose some less spicy, like pepperoncini or jalapeño, or choose something super spicy, like habañero or Thai hot. Some other options are Cayenne, Serrano, Anaheim and Tabasco.

Yield: about 1½ cups (360 ml)

Ingredients

  • 6 cloves (21 g) garlic
  • 1/4 cup (28 g) sliced fresh ginger
  • 1/4 cup (28 g) sliced fresh turmeric root
  • 1½ cups (360 ml) raw apple cider vinegar
  • Small handful (3 g) fresh oregano sprigs
  • Small handful (3 g) fresh thyme sprigs
  • Zest and juice of 1 lemon
  • 1–3 tbsp (15–45 ml) raw honey (optional)
  • 1–2 fresh hot peppers, such as jalapeño, cayenne or habañero, sliced (optional)

Directions

  1. Mix all the herbs, hot pepper (if used) and apple cider vinegar in a pint-sized (473 ml) mason jar. Cover the jar with a lid, place in a cool, dark place, and infuse for 4 to 6 weeks. Strain out the herbs, add the honey and stir.
  2. Whenever you feel sick, take 1 tablespoon (15 ml) up to 3 times a day. It can also be taken once or twice a day during cold and flu seasons as a precautionary measure and to help boost your overall immunity. You can either take it directly or stirred into water.
  3. The vinegar infusion without hot pepper, is safe for children 2 years and above.
